How to Make Decaf Coffee and Why Clockwork Roasters’ Decaf Is Truly Chemical-Free
If you love the taste of coffee but want to skip the jitters or late-night buzz, decaf coffee is your friend. But not all “decaf” is created equal — many methods use chemicals, which is not something we believe belongs in your cup. At Clockwork Roasters, we’re proud to offer decaf that’s been processed without any harsh solvents or additives (more on that later). First, let’s walk through how decaf is typically made — and how you can brew a great decaf cup at home.
1. The Big Question: How Does Decaf Coffee Get Made?
Before beans are roasted, they start off “green” (raw). Decaffeination happens at that stage. There are several ways to remove caffeine; here are the most common:
Method | How It Works | Pros & Cons |
---|---|---|
Chemical Solvent (Direct or Indirect) | Beans are steamed and rinsed or soaked, then treated with a solvent like methylene chloride or ethyl acetate to extract caffeine. | These methods are efficient and cost-effective, but they use chemicals. Some traces may remain (though regulated). |
Supercritical CO₂ (Carbon Dioxide) | CO₂ under high pressure acts both like a gas and a liquid to selectively dissolve caffeine from the beans, leaving much of the flavor intact. | It’s a cleaner method (no harsh chemical solvents), but relatively expensive and not as widely used. |
Water-based Methods (e.g. Swiss Water Process) | Beans are soaked in water to draw out soluble compounds (including caffeine) into a solution. That solution is filtered through carbon filters to remove the caffeine, and then reused to decaffeinate more beans. No chemical solvents are used. | It’s a gentle, chemical-free approach that preserves flavor and is used by many specialty roasters. |
Among water-based options, the Swiss Water® Process is one of the most recognized. It uses only water, time, temperature, and carbon filtration — no additives, no solvents. After processing, the beans are tested and only up to about 0.1 % caffeine (or less) remains.
Because Clockwork Roasters’ decaf is done without any chemical solvents, you get all the flavor you expect from specialty coffee — without compromise.
2. Brewing a Great Cup of Decaf: Tips & Tricks
Even though decaf is processed differently, brewing it well doesn’t have to be complicated. Here are some pointers:
-
Use Fresh Beans
Decaf beans, like regular ones, oxidize and lose flavor over time. Use them within a few weeks of opening. -
Grind Just Before Brewing
The moment your beans are ground, their flavor starts escaping. Grind right before you brew for maximum aroma and character. -
Adjust Brew Ratios
Decaf can taste a bit softer or flatter than caffeinated beans, so you may want to bump up the dose slightly or brew a little stronger to compensate. -
Watch Water Temperature
Use water in the 195–205 °F (90–96 °C) range. Too hot can extract bitter compounds; too cool may lead to under-extraction. -
Give It Time
Because the bean structure has been altered through decaffeination, decaf can take a little more time to extract fully. Be patient with your brew parameters. -
Trial & Error Is Key
Try adjusting brew times, grind size, or dose until you find what tastes best to you — decaf, like any coffee, is personal.
3. Why Choose Chemical-Free Decaf (Like Ours at Clockwork Roasters)?
-
No residual solvents: Traditional solvent methods may leave chemical traces, albeit small ones, because chemicals like methylene chloride or ethyl acetate must evaporate off.
-
Flavor integrity: Because we don’t introduce harsh chemicals, there’s less risk of altering your coffee’s natural profile.
-
Peace of mind: You know exactly what’s going into your cup — just beans and care.
-
Specialty standards: Our decaf goes through the same quality checks and roast care as our caffeinated lines.
